Spicy Papaya Salad - 4 Servings


Green Papaya (Shredded)(12oz)
Grape Tomato (Chopped)(6oz)
Snake Bean (Chopped)(4oz)
Cilantro (Chopped) (2oz)
Garlic Clove (Whole))(2x)
Andaman Breeze (4 Tablespoons)


Step 1:

Peel and shred the green papaya. This can be done using a mandolin, a kiwi peeler or by knife. Ensure the peeled strips are thick enough to retain their crunch after the salad is pounded.

Step 2:

Place the garlic and Andaman Breeze in a mortar and pestle. Pound until the garlic breaks up into small pieces. Add the shredded papaya and continue to pound. Be delicate enough to ensure the papaya is infused with the flavors without breaking up or turning mushy.

Step 3:

Add the tomatoes, snake bean and cilantro. Pound a few more times. Toss the ingredients with a large serving spoon and serve the salad immediately.
